Title: Pasta with Warm Salmon

45gButter
1cCream, thickened
4 Kaffir lime leaves cut into fine strips.
  Salt
  Pepper, black freshly ground.
375gPasta, linguini/fettucine
1tbLime juice
1smArgugula, bunch of... washed and stems trimmed.
4slFish, salmon, smoked -OR-
4slFish, trout, smoked -OR- cut into strips.

In a medium saucepan, melt butter and stir in the cream. Bring slowly to the boil then add kaffir lime leaves. Over a moderate heat, reduce the cream by one-third, stirring all the time. Remove from the heat, season with salt and freshly ground pepper and set aside.

Meanwhile, bring a large saucepan of salted water to the boil and cook the pasta until just tender, about 8 minutes. The pasta should still be firm to the bite [al dente].

Drain pasta thoroughly, return to the pan and add the cream sauce, lime juice, arugula and salmon strips, tossing carefully over a gentle heat until nicely mixed.
